
This week I will be out of the home Monday, Wednesday, and Friday for at least part of the day. Because this is unusual for us I am a little afraid that I will be tempted to opt for take out or nothing at all. So what better than three slow cooker meals to keep everyone well fed?
For some reason I blanked on slow cooker recipes when I started meal planning today, but I think just about anything can be adapted to the slow cooker. Once I finish developing these recipes I will be sure to share them with you. Who isn’t on the look out for good slow cooker recipes?
So tell me… what great recipes have you been cooking up?
Monday
- breakfast: smoothies: yogurt, blueberries, stevia, coconut oil
- dinner: Sausages and veggies in slow cooker over spaghetti squash
- prep: grocery shop, pick up eggs from farmer, place buying club order, soak oats, make yogurt
Tuesday
- breakfast: soaked oats + chia seeds + crispy walnuts + butter

dinner: Roasted chicken, Roasted squash w/ butter, steamed vegetables
- prep:make chicken stock
Wednesday
- breakfast: squash-coconut flour dutch baby pancake
- dinner: (slow cooker) Stewed white beans w/ rosemary, Italian quesadillas
- prep: pick up milk & vegetables from farm, soak oats, soak rice
Thursday
- breakfast: soaked oats + chia seeds + crispy walnuts + butter
- dinner: Chicken Curry, Brown Rice, Salad
- prep:soak grains for Sat. porridge
Friday
- breakfast: smoothies: yogurt + eggs + blueberries + coconut oil + stevia
- dinner: (slow cooker) Italian Beef & Sprouted Chickepeas with Tomatoes, Roasted Squash, Salad w/ homemade dressing
- prep: pick up buying club order, cook chickpeas in morning, start crock pot, pick up buying club order
Saturday
- breakfast: soaked crock pot porridge + chia seeds + crispy walnuts + butter
- dinner: vegetables + dip, popcorn with butter, smoothies: yogurt + blueberries + coconut oil + stevia

your menu plan looks really good! I just made chicken tortilla soup is my slow cooker. Using it always makes my home smell so good.

I use SweetLeaf SteviaPlus (with added inulin fiber) in smoothies! YUM!

Christi – I just use some Italian flavors – mozzarella and parmesan, Italian herbs, red peppers & onions, etc.
