Menu Plan – Grain & Bean Free

It has recently come to our attention that my husband may be battling a mineral deficiency. Because of that combined with everything I read recently in How to Reduce Phytic Acid in Your Food we are removing all foods that may block mineral absorption from his diet.

That means removing grains or beans and focusing on mineral rich foods like animal products, soaked nuts & seeds, and bone broths. We will also be traveling out of town so preparing a lot of food ahead of time will be my goal for the week. I find it difficult to know how to communicate our special dietary needs to others so I want to make sure we are prepared to prevent imposing any further on our hosts.

I plan on packing leftover meatloaf, smoothies in quart jars, raw cheese, crispy nuts, and possibly some coconut flour bread or muffins. Do you have any tips for travel food for those with dietary restrictions?

Sunday

  • breakfast: brunch – salads, eggs & sausages
  • dinner: Deconstructed cabbage rolls for the crock pot, roasted yams + butter + molasses
  • prep: thaw fish

Monday

  • breakfast: smoothies
  • dinner: Baked wild trout w/ butter + lemon, southern style greens, baked potatoes, broth
  • prep:shop at hfs, soak nuts/seeds

Tuesday

  • breakfast: eggs, leftover potatoes
  • dinner: Thai beef lettuce wraps w/ sauce, braised cabbage + carrots, broth
  • prep: dehydrate nuts/seeds

Wednesday

  • breakfast: smoothies
  • dinner: Coconut flour pancakes + eggs + bacon
  • prep: pick up milk + eggs from farm

Thursday

  • breakfast: Fried eggs, leftover pancakes
  • dinner: Meatloaf + baked potatoes + salad, broth
  • prep: pack up foods for the road

  1. This menu sounds especially yummy!

    One thing that could be good for traveling would be to make little muffin-tin omelette “muffins”. They travel well!

Thanks for sharing your meal plans, they are such a great way to either add new ideas or are great reminders of things I’d forgotten about:) As for travel, you mentioned not imposing on hosts; I’m sure it’s not a new idea to you, but I’ve found that if I’m someplace I’m comfortable cooking offering to make meals is both a great way to share how I live with people I care about, and is also a way to eat my own way without asking anyone else to do more work. I love the reactions of family that kinda turned their nose at how I eat till I cook for them! And that way I can make enough to last a few days and the same time:)-

  3. Okay, I was going to say that I would like to hear about the deconstructed cabbage rolls and that omlet/quiche muffins work well as road food, but I see I was beaten to the punch.

    We travel lots for work and find that boiled eggs or canned fish mixed with mashed avocado makes an excellent salad. It’s sometimes rolled in napa cabbage leaves, sometimes eaten with sesame crackers, sometimes eaten with a spoon.

    No grain granola mixed with coconut milk also works well for us. I can decant coconut milk into a glass jar and keep it in my “freezer cooler” in our cargo trailer. I usually chill a can of coconut milk then pour off the more liquid part before scooping the rest into a jar. I think it keeps better with just this very fatty fraction. That may be my imagination.

  4. We do the SCD (Specific Carbohydrate Diet, a grain free diet) at our house. My son loves the nut and seed flour baked goods and they travel well. Chicken salads do well. For the first day, soup in a thermos. We dry strawberries into chips and our son loves them. Homemade jerky does well too.
    There are also several GORGEOUS cookbooks for the SCD diet.

    question for you- i often see potatoes lumped in with “grains” when people decide to stop eating grains- do potatoes not pose the same issues as grains?

    also, according to rami nigel when he was interviewed on cheeseslave, he said seeds are the worst culprits of mineral blocking food, or is this only if unsoaked/sprouted?

  6. I’m also doing the SCD. The nut muffins are amazing and you can freeze them and then take the whole bag with you. I also make “pancakes” made with bananas and eggs. Sometimes I even add roasted squash. They’re very tasty.
