Thanks Stella! I know, those two were the hardest for me as well, as I bake all of our bread, and I love a nice crusty country loaf of white bread - not to mention how much my Italian husband does. In Italy they eat a lot of white flour breads...so I found it easiest to switch over to spelt flour which acts very much like white flour, and to maple sugar. I love maple and you can get it in sugar form. I haven't stopped drinking coffee either, but I am down to 10 oz of brewed coffee as opposed to the 4 shots of espresso I was used to!

Hi Shannon!

Jenn, reading your diet turned out to be like looking in someone's fridge. Yes, I'm nosy and I love looking in people's fridges and pantries. It was also inspiring to see how you eat. I really need to ween myself from the use of A.P. flour and white sugar. I use a lot of organic, whole grains in cooking, but I haven't had the discipline to get these two things out of my cabinet. I suppose I tell myself it's okay b/c I buy organic flours and sugars-this doesn't change the chemistry in the body though (blood sugar, etc). A plan is in order.
p.s. I don't want to stop drinking coffee-me love (smile)! Thanks for sharing this, Jenn and Shannon. So inspiring!
