Harvesting

Besides having babies, nothing shows forth the sovereignty of God to me like watching the process of seed to plant to food. Perhaps it is the sentimental new mama hormones, but it truly is a miraculous thing to see.

Months ago we planted a winter garden with kale, parsley, cilantro, onions, peas, and lettuce. The kale didn’t make it when the chickens discovered our all-you-can-eat buffet, but the cilantro has come back with a vengeance.

The cilantro thinnings and a few clippings from the larger plants made it into some lacto-fermented salsa this week. Lettuce and onions look like they will be ready to harvest soon as well. I know those fresh salads will be very much appreciated at our table.

 

And then there are these eggs from our ladies. Hoping someday soon to expand the flock, but for now these two hens produce eggs that are treasured for their scarcity.

It’s so new for us to be harvesting, even these little bits, during the hustle and bustle of the spring planting season. Just another change as we get used to this southern existence.

  1. Those look like lovely healthy eggs. I can’t wait for the day we own our own place and can have chickens again, although I’m sometimes able to get organic eggs from the same farm we get our raw milk and cream from, so that’s something at least.

    I love your pallet fence. What a great way to re-purpose pallets!

  2. Through research I have found that Cilantro naturally removes heavy metal toxicity from the body. It is a blessing for sure. Enjoy it.

    1. Cynthia – Yes, I’ve read that too. We love the stuff so I’m using it in lacto-fermented salsa, salads, salad dressings, stir-fries, and just about everything else we eat :).
