Video: Grain-free, Dairy-free Fluffy Coconut Flour Pancakes

By far the most popular recipe I have posted on this site is the Fluffy Coconut Flour Pancakes. I couldn’t tell you for sure why that is, but I’m guessing it has something to do with the enticement of a fluffy pancake when you’re not eating bread, baked goods, or even a bowl of porridge.

I know how it is.

So imagine my delight when Lillian emailed me to let me know that she tried my recipe for the first time… on camera. My first reaction was this could go either way, given the dynamic and passionate (and sometimes ridiculous) responses I have gotten to that recipe.

But then I watched the video. And she actually followed the recipe. And she really liked them. And she was really funny.

Will these only work with the fat from the coconut milk? Or do you think substituting almond milk would work?
