Fall begins the cooking season, in my opinion. We did eat over the course of my first hot Texas summer but it was a bit like child birth. During the process you just try to make it through with the sweat and the tears and afterward your subconscious forces you to forget the details.

So here we are, nearly October, and the temperatures have been a cool 90 degrees (snort) lately. So I’m making heartier meals like this one pot wonder that includes whatever flavorful meat and vegetables you happen to have around:
